brown rice troubleshooting

help -- I can't cook brown rice. The package says to use 2 1/2 C water to 1 C rice -- bring water to boil, add rice, and simmer covered for 45 minutes. OK. This didn't work. The pan was still awash in liquid and the rice was only partially hydrated. So I looked in the cookbook, and it says for brown rice to use 2 C water to 1 C rice, and otherwise same as the package. This time it looked sort of OK, but it was crunchy in the middle and still had way too much leftover liquid.

I cook white rice all the time in this exact same pot and I never have any problem getting non-crunchy rice. I don't know what would be so different about brown rice, other than the longer cooking time.

help???

I cheat and buy Uncle Bens brown rice, it cooks in ten mins.
If the rice was too gloopy try rinsing the rice in a sieve before you cook it, it makes it less gloopy, and possible leave the rice on for longer, if its crunchy then it's not cooked.

For me it takes longer than they recommend to cook tender and cook up all the water. But brown rice (not instant) will not get soft like white rice, it has a firmer texture. I've switched to the "boil in the bag" type to get a softer rice.

Heather's instructions for brown rice in EFI are a little different. If you've got the book, they're on page 127. If not, let me know and I'll post them.

I also use Uncle Ben's brown rice, but it's not the quick cooking kind. Not sure if you have one, but I cook the brown rice in my rice cooker, using the manufacturer's cooking directions, and it isn't hard or crunchy at all.

I don't have a rice cooker and I don't want to use instant rice (too expensive), so I'll try the EFI instructions and see where that gets me. Thanks!
