Vietnamese Noodle Soup...for Casey and others

Pho Seafood/Chicken
3 cups broth ½ cup seafood/chicken (I use more) 1 clove garlic (minced) 1 tbsp. oil 3 tbsp. fish sauce 1 tbsp. ginger (minced) chilies to taste 3 noodle "nests" green onions (chopped) red onion (slice thinly)
prepare rice vermicelli noodles and set aside
sauté meat in garlic and ginger (if you use grilled shrimp and there is no need to sauté, add the garlic and ginger to the broth)
bring broth to a rolling boil
put the vermicelli in a large bowl, place meat, green onions and red onions over noodles. pour broth over the noodles…eat! You can add any veggie you like...I have had it with cabbage, carrots...whatever veggie is safe for you.
most of this is done to taste…
Vietnamese people add fresh bean sprouts and mint to their soup.
Excellent and very low in fat!
If you are in a hurry you can use a can of chicken broth, add 1 T of fish sauce for every 8 oz broth.

Nevermind I JUST figured it out.... the ingrediants where not on seperate lines.... LOL

generally the vietnamese take a pkg of rice noodles and make a "nest" into each bowl. They then top the noodles with the meat, onions, bean sprouts, mint and such and then pour broth over the whole shebang.
There is nothing scientific about making this...it is all a matter of taste. I love this stuff!

you mean you boil the noodles and then form them into the shape of a nest? Or somehow weave them into a nest looking shape and fill it with the other stuff?

Yes.... yes, you do!
I always just put the noodles in the bowl - nothing scientific about it. The noodles are quite long and kind of stick to each other, like pasta does, so you can just kind of coil it around in the bowl if you want to. Think about taking cooked spaghetti and putting it in a bowl, and laying it in a circle so that there's a little bit of an "indent" in the middle.
But honestly, that's more work than I go through. I just put them in the bowl!
