Shelf life of unopened tahini

Ok, I googled this and couldn't find an answer... maybe I'm just spastic this early in the morning, but who knows.
Anyway, I know that the shelf life of a jar of tahini is about a month after you open it, but what about an UNopened jar? I have a huge unopened jar of the stuff in my pantry, and it's a couple months past the sell-by date. Anyone know if it's ok to use?

Honestly, I keep opened jars around forever. My mom stock piles the unopened jars in the garage for a looong time. I don't think the stuff expires. I just asked my mom, and this was her response: "i don't like to keep anything more that 3 yrs, unopened , of course." So, there ya go. You should be fine. Treat it like any other vegetable oil -- if it smells rancid, chuck it.

i agree with everyone else: it sounds fine, especially since it's just a couple months past sell-by, and i doubt they'd expect you to use a huge jar in two months; and damn that new picture is smokin.

I should have just directed the question to you in the first place... I knew you'd have the perfect answer for me. Thanks! It's one of those dumb situations where I've always bought tahini in a smallish can and used it up pretty quickly... this time all I could get was a big honkin' jar, and it's all separated and strange-looking. But I'll crack it open and give it a sniff. Thanks!

Don't worry about it being separated. It's just natural for the solids to settle at the bottom and the oil to float on top. Give it a good stir and you'll be fine.

(OK, so this has nothing to do with tahini -- or recipes -- shhhh)
Casey -- how is belly-dancing? Is it good exercise? I've always wanted to try it. Of course now I don't want my belly shown 'cause of all the surgical scars but I really need to do some kind of exercise besides my PT stretches, and my options are pretty limited right now.
