Oven-Fried Honey Chicken (2 servings easy to double)
1 tablespoon & 1 teaspoon honey 2 teaspoons balsamic or red wine vinegar 1/2 cup dried bread crumbs 1 teaspoon olive oil 2 (4-6oz.) fresh boneless, skinless chicken breasts, halves Preheat oven to 375°F. In shallow bowl, whisk together honey and vinegar. Pour bread crumbs into separated bowl. Set bowls aside. Spread oil over foil-lined baking pan large enough to hold all chicken pieces in one layer. Roll chicken pieces in honey mixture, then in bread crumbs; place in pan.
Bake for 30 minutes*, or until cooked thoroughly.

Maybe I will make this tonight for the girls and I. My husband gets to go the bachelor party while I stay home and get the house to myself after the girls go to bed . Unfortunately (maybe fortunately?) I miss out on the bachelorette party.

I won't have a sitter so I miss out. They are both really low key. The girls are going to Don Pablos for dinner and then, last I heard, to a bar to play pool. Not my favorite things to do. All though I wouldn't mind the mexican food.
The guys are definatly go out for some good (cry) buffalo wings and then they aren't sure what else.

First of all the chicken was awesome. Maddie and I loved it.
Second, no they didn't go to Hooters. We have tons of wing places around here. It is one of the foods this area is known for. Tory was actually home by 10:15 p.m. The groom was worried about his bride. He cares so much about everyone else. I didn't care that they were home so early because I was actually bored. The matron of honor and the friend that did my daughters' hair for the wedding went out with my sil. I feel bad that more of her friends couldn't make it.

Oh what a great idea...I wanted to make the recipe at home...but didn't have bread crumbs...I betcha you could use Cornflakes...especially with the honey as an ingredient..It should be good!

I always line my pans with foil anyway, because I like the easy clean up. Don't know why it was required in this recipe, but I would've done it anyway.

I'm always gunshy about using aluminum in my cooking and baking. They used to believe it contributed to Altzheimer's; I don't know if they still do, but I figure why take the chance?
Don's mom died of Altzheimer's. She used to always use aluminum ALL THE TIME, and she drank several beers (out of aluminum cans) every single day of her life -- Marie did love her beer! -- and I really got the connection. I just don't use aluminum ever.
Does it really make that much of a mess in the pan? Even if you spray it well with Pam first?

Yes Bev they still make a connection with aluminum and Alzheimers, but your aluminum baking foil appears to be less of a contributor than other things. (If you are skitish why not use baking parchment?)
Please look at the following articles, especially the last one. Your tofu may of a bigger threat of adding aluminum to your system than the foil you line a pan with.

I have been an emotional mess lately...he is growing out of clothes from when we brought him home from the hospital and fitting outfits that used to be so big and everytime I put them away or get out something new I am crying my eyes out LOL - I keep telling Don that we will look back and he will be graduating...he thinks I have lost it teehee..

Unfortunately, Vegas just isn't in our budget this year. I am on maternity leave and therefore only earning 1/2 my wage for one year. We can live on it, but we can't be taking any trips that's for sure LOL

This was SO good.... once I started cooking I realized that I did not have balsamic or red wine vinegar...so I used seasoned rice vinegar....it was really good...and the rice was a great compliment to the chicken as well...will make again for sure!

Mine does the same thing sometimes... I think the moisture of what you dip it in, stays trapped under there and then the crumbs just get soggy.... you could TRY this... put them on a rack sprayed with non-stick spray....no guarantees.... but it just might do the trick!! Let me know... heck, I might even try that myself tonight!! Glad the boyfriend asked for it...that is always a good sign!!

CALORIES (appox) Oven-Fried Honey Chicken (2 servings easy to double)
1 tablespoon & 1 teaspoon honey 85 2 teaspoons balsamic or red wine vinegar 5 1/2 cup dried bread crumbs 194 1 teaspoon olive oil 40 (if you use it) 2 (4-6oz.) fresh boneless, skinless chicken breasts, halves 4oz = 125 each x 2 = 250, 6oz = 187 each x 2 = 374
Add up the ingredients that YOU use, then divide by 2 (for this recipe), that will give you your calories per serving. Hope that helps

I made this for dinner last night and it was wonderful. I used the original recipe with balsamic vinegar, except I used 1/2 cup of corn flake crumbs. I have a strange round rack with slits in it - I think it was meant to put jars on when you're sterilizing them before canning stuff - and I sprayed that with Pam, put it in a big CorningWare baking dish, and cooked the chicken on the rack. I cooked it for 45 minutes instead of 30 and turned it twice during cooking. The chicken was great and not at all soggy.

mashed potatoes and a veggie (usually beets - my husband hates them and I hate green beans, so I make both and we each get what we like! ). I've also made Heather's cornbread with this. Sweet potatoes would be good also.

Hi Beth, Carrots and beets do have a subtancial amount of IF in them. Just check out the fiber chart on the Northwestern Med. School web site. Even by H's smushable rule,just try smushing a raw carrot, not too easy. -Bob

How about smashed potatoes with the skin still on? Just boil up the potato and smash it up with some chicken broth and some ICBINB light. Also maybe some creamed spinach? Just boil up some frozen spinach, drain it, and mix in some safe soy or rice cheese. Add a little soy milk to thin it if you need to. Spinach has a ton of IF and should be tolerable alongside the potatoes or a roll.

As Dr. Phil always says, how's that workin' for ya? I know that you are very scared, but it seems like you recognize that you need to do things differently in order to feel better (for example, you always ask for suggestions), but then you're afraid to implement the suggestions. Why? Are you feeling so good right now that you don't want to mess it up? I'm pretty sure the answer to that one is no, right babe? So if you're already feeling like crap, you might as well pull out all the stops and try every new scary thing, like spinach, and blueberries, and potatoes with the skins on (and hypno ...). If what you're doing right now is not working, then you have no reason not to try something new -- especially because Heather has emphasized that Cs need to incorporate as much IF as humanly possible. Now mind you, a bunch of the numbers on the chart are in the wrong columns. Whoever did it formatted the chart wrong. I haven't looked at it recently to see if they fixed it. H puts anything that has SF in it on the SF list, many of the items actually have more IF than SF. The NW chart has a 1/2 cup of cooked carrots as 1.1 SF and 1.5 IF and the total should be of course 2.6 g's not the 1.6 they have. -Bob

I love it...but never had thought about that for myself! You're too smart. I picture a lot of cases going in your favor, smarty pants. Very logical reasoning! I see many cases going your way in the future.
I'm just afraid (there's that word again) that the new things will make me even worse than I am now. It could be true, ya know. I have always thought that you shouldn't try new things until you feel better so that you know what is making you feel bad. I have tried some new foods though. Like sushi and hummus. (both are super yummy). It's scary though.

Oh, I'm so glad I'm not the only one who watches Dr. Phil. I don't watch him religiously, but I do watch him often. I love his "How's that workin for ya?"
I agree with Panda - I have the same problem. I ask for suggestions, ppl answer me, and then I go berserk with all these excuses. I have only a few reasons that are legit - i.e. lack of money/resources/transportation. The other excuses "I'm afraid to try." are up to me to change. I am not good at changing! *lol* I try to be flexible, but sometimes, I am afraid to try new things because what if I screw up? What if I ruin it? What if I get sicker? What if it just plain tastes bad or what if my bf hates it?
The best advice I read when I first found this site was to process IF as much as possible before it gets to my gut so that my body had less work to do. It's still hard to stay away from low-fat stuff, but again, it's something I have to just make myself try. I experiment with cooking times, and ingredients and since I'm a bad cook (*giggle*) I don't always come up with amazing foods. I eat skin-on potatoes rarely but I don't avoid them (I actually loved skin-on until the IBS showed up.) I like spinach, but am picky how I eat it. I can handle almost any veggie and fruit if I'm careful. Good luck trying new things! If you find something that works, let us know, I know I'd like to try more variety also, especially if it's quick, inexpensive, and easy variety, lol!

I totally empathize with you! Btw, I love hummus, but I noticed not too long ago, that it made my tummy get all pinched up. You'd think with the SF base of pita bread, and the fact that the chickpeas were all ground up IF - it should have helped. It's not like the hummus was fancy either or overdone with unsafe ingredients either (at least not that I could tell), it was seasoned with some garlic and some other spices that were mild. I crave hummus a lot but am afraid to eat it too much. Only tried sushi once - yellowtail tuna is my fave. Will probably try sushi again when I can afford to. *Rofl* That was great imagery Bob, trying to smush a raw carrot. And normally Heather's smushable rule works well for some things, but not all. How about using a meat mallet or sledgehammer to smush it? *giggle* But seriously, try grating the carrot if you're gonna eat it raw? That way you don't lose the nutrients in the skin, but you at least break up the IF better? Beets can probably also be grated? Ya know those salad bars at restaurants - they always seemed to have cold, grated beets. I wonder also, if juicing your veggies would help?? I keep wondering this myself, every time I see those Juicer commercials...

I'm stumped, I'm looking for a recipe that is simple and inexpensive. My mom decided to throw me an impromtu bday party tomorrow and I'm in a time crunch. She wants me to find a recipe to cook for dinner that she can afford to do. My family has a hard time figuring out my IBS needs, even when I've told them hundreds of times, so she wants me to email her a recipe ASAp because tomorrow is the bdah celebration. Have any of you tried this chicken recipe? It sounds like it fits the bill. I just hope everyone likes it! I'm reading about everyone's side dish suggestions. If anyone has tried this oven-fried honey chicken I'd love to hear your opinions. I wish I had enough time to find something that doesn't heat up the house tho, lol, it's very hot here, in AZ! Thank you all!

I was just about to suggest using a baker's rack that you cook cookies on placed over a cookie sheet. Cool, thanks.

Yes, I'm replying to myself. I'm sorry all for jumping the gun - you had all posted replies about this recipe and I didn't even bother to scroll down. I was so frantic about other ppl's opinions I didn't even think. I'm sorry! It looks like a lot of you liked it. I'm going to try this. I'm going to have my mom try it rather, since she's the one making my bday dinner. I will suggest the baking rack idea and also I think white rice would taste good with this and I'll let my mom choose a veggie (I can usually tolerate almost any veggie, usually, lol) I just hope having her cook two oven recipes (desert and dinner) won't be too much of a hassle. Thanks again all!

Just boil up some frozen spinach, drain it, and mix in some safe soy or rice cheese. Add a little soy milk to thin it if you need to. Spinach has a ton of IF and should be tolerable alongside the potatoes or a roll.

Can you tell me how long I should cook if I use 4 pieces of chicken? About 2 lbs total.

I usually do this with little chopped up bit s of chicken so I do them for fifteen minutes at 400 degrees. If your using full chicken breat then anything between 20 to 30 should be fine. Start with a shorter time then cut the chicken to check if it's cooked and put it back in the oven if it needs more time.
