This was SO good.... once I started cooking I realized that I did not have balsamic or red wine vinegar...so I used seasoned rice vinegar....it was really good...and the rice was a great compliment to the chicken as well...will make again for sure!

I made this again last night but made a few changes.....

1 tablespoon honey 1/2 teaspoons seasoned rice wine vinegar 2 tablespoons BBQ sauce 1/2 teaspoon chipotle powder 1/2 cup dried bread crumbs 1 teaspoon olive oil 2 (4-6oz.) fresh boneless, skinless chicken breasts, halves Preheat oven to 375°F. In shallow bowl, whisk together honey, vinegar,bbq sauce, and chipotle . Pour bread crumbs into separated bowl. Set bowls aside. Spray cooking spray over foil-lined baking pan large enough to hold all chicken pieces in one layer. Roll chicken pieces in honey mixture, then in bread crumbs; place in pan, spray with cooking spray again (will help to make crispy) .
Bake for 30 minutes*, or until cooked thoroughly.

It's really not fried... it is baked in the oven , but it tastes like it could have been fried! No, grilling would not work because the coating would fall off...

I made this last week and it was DELICIOUS. I am going to make it again tonight for dinner (at the request of my boyfriend), but I just had one question. Last week it got kind of soggy on the bottom. Do you have any suggestions to prevent that?

Mine does the same thing sometimes... I think the moisture of what you dip it in, stays trapped under there and then the crumbs just get soggy.... you could TRY this... put them on a rack sprayed with non-stick spray....no guarantees.... but it just might do the trick!! Let me know... heck, I might even try that myself tonight!! Glad the boyfriend asked for it...that is always a good sign!!
