Another copycat recipe for a problematic condiment we've been discussing lately. I found this online, and it's supposedly from Reader's Digest's "Great Recipes for Good Health".
MOCK COOL WHIP 1/2 cup soy milk 1/2 cup soy milk powder 1/8 tsp Cream of tartar 4 tsp Lemon juice 2 tsp Sugar (opt) 1/2 tsp Vanilla (opt) 1. Put the soy milk in a small metal bowl, set in freezer, and let stand just until ice crystals begin to form (about 15 minutes). 2. Remove from the freezer and add the dry soy milk powder and cream of tartar. With hand electric mixer, whip the mixture at high until foamy. 3. Beat in 1 tsp. lemon juice and continue beating until the mixture begins to thicken. Beat in another tsp of lemon juice and if desired, the sugar, and continue beating until the mixture peaks softly. Add the remaining 2 tsp lemon juice and continue whipping to stiff peaks. Fold in vanilla (if desired), and serve immediately as a dessert topping or however you use Cool Whip.

Do you have any suggestions for leaving out the soy?? I'm allergic to soy, so I know I could use rice milk....but what about for the soy milk powder?? Do they have a rice substitute for that???

Hi Sheila...I don't see why you couldn't use rice or almond milk? Give it a try and see how it works!
