Baked Veggie Stew with Biscuits on top

Just had this for dinner tonight....so tasty, total comfort food. Found the recipe on Good Girl Gone Vegan
Cook/nuke a box or can or whatever of mixed vegetables. I sauted on the stove a can of sliced mushrooms, some shredded carrots, some frozen green beans, and some quorn chicken tenders Put them into a baking pan. Mix up a couple of cups of brown gravy and pour over the veggies:
Brown Gravy:
2 cups water
4 Tbs. flour
4 tsp. soy sauce
Mix in a shaker jar. Shake well to get all the lumps out. Pour into a small saucepan. Bring to a boil. Stir constantly until thickened. Season to taste with black pepper, garlic, onion.I used black pepper and some minced garlic, and forgot to boil it, but it turned out yummy anyway.
On top of the gravy and veggies, you put your biscuits.
This recipe is from Bryanna Clark Grogan's book, The (Almost) No-Fat Cookbook, page 75.
Featherlight Dumplings
Makes about 8 Dumplings
Mix in a medium bowl:
1 cup unbleached flour
2 tsp. baking powder
1/4 tsp. salt
Stir in to make a stiff dough:
1/2 cup reduced-fat soymilk I used Rice Dream rice milk
Stir briefly just to mix. Drop small spoonfuls of dough on top of vegetables. Bake uncovered at 400 F. for about 15 min. Cover with foil and bake another 15 min. The biscuits end of expanding and covered the entire top of my pan, so don't worry if the batter dropped into the pan looks small at first. Also, I think this will serve about 4, at least I'm going to get 4 meals for me out of it, and I stuffed myself on it tonight
