I made a cake yesterday and made chocolate frosting to go with it. The frosting has soy milk, powdered sugar, cocoa, soy margarine and vanilla in it. My question is do I need to refrigerate the cake? I have it stored in one of those cake platters with a glass lid over it. I just don't want it to go bad or make myself or anyone else sick. Thanks!

I made one last week for my baby's 8th birthday sniff, sniff. I left it out on the counter for 3 or 4 days. I can't remember when Zoe and I finally finished it lol. Boy that child likes cake. It seemed fine but I'm sure the fridge would be better.

I've found that low-fat stuff like that tends to go bad after about 48 hours if left out. Cake with frosting is the worst. I kind of wonder if the soy milk separates, because if I leave it out I end up with liquid at the bottom of the pan. Ewww! Be especially careful if it's chocolate -- it's harder to see visible mold.
