TURKEY MEATLOAF
2 tablespoons butter or margarine (or sub) 1 cup chopped onion 3 cloves garlic, minced 1-1/2 lbs Lean Ground Turkey or Turkey Breast 1/2 cup fresh bread crumbs 1 egg 3/4 cup catsup (1/4 for loaf, 1/2 for top of loaf) 2 teaspoons Worcestershire sauce 3/4 teaspoon salt 1/2 teaspoon white pepper
Heat oven to 350 degrees. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a large bowl; cool 5 minutes.
Add turkey, bread crumbs, egg, 1/4 cup catsup, Worcestershire, salt and pepper to onion mixture; mix well. Pack into an 8 x 4-inch loaf pan. Spread remaining 1/2 cup catsup over top. Bake for 50 to 55 minutes or until no longer pink in center and internal temperature of loaf reaches 165 degrees. Let stand at room temperature 5 minutes before slicing. Makes 5 servings

Hi Shell.. that recipe sounds great..heres another variation of meatloaf that i make..its so yummy. I add cut up artichoke hearts, to keep it moist..and a package of lipton onion soup mix for a boost in flavor.

Oh that sounds good too.... mine was VERY moist... and oh, did it smell good and taste good. I normally use lipton onion soup mix too, but did not need this time because of the fresh onion & garlic.... the white pepper gives it a nice bite too! YUMMERS... hubby & I were talking last night about when to make it again, if just might become one of those in regular rotation
Thanks for the artichoke tip... I'll have to see if I can sneak those in sometime

This sounds so good! I am gonna have to give it a try. You know I was thinking of maybe moving in with you...you are always cooking, baking etc.
Your husband must be one happy man!! I am not telling my hubby where I am going or it will be a race to see who gets to live with you LOL
