Ginger Orange Applesauce in the Microwave (Makes 4-6 servings)
This is a great change from plain old applesauce. The orange gives it a great flavor and the candied ginger gives it a little bit of a kick. The original recipe was whirred in the food processor or blender, but I like my applesauce chunkier, so this is my version. I also descreased the microwave time because it was done much sooner than stated.
2 lbs apples (I used Empire) 1/4 cup clementine juice (about 2 clementines) 1 tablespoon lemon juice 1/8 cup sugar (I used slightly less because Empires are a sweeter apple) 2 tablespoon candied ginger
Wash, peel, core, and slice the apples. Juice the clementines and the lemon. Put the apples and both juices into a 2 or 2 1/2 quart microwave safe dish with a lid. Close it and microwave, on high, for 5 minutes. After 5 minutes stir and put back in the microwave for 4-5 minutes on high. When it is done mash it with a potato masher until it reaches your desired consistency. Add the sugar (you may want to add slightly less and taste) and stir. Chop up the candied ginger and fold it into the apples with a spoon. This is great warm, or you can put in a different container and chill. The ginger taste becomes more obvious as the flavors have time to meld together!

I just bought some candied ginger the other day too!
BTW, 1/8 cup is the same as 2 T, right? Just wanted to make sure before I tried it.
