I'm new here! I have been reading & trying out your recipes for sometime now. This site has helped me alot! I have a recipe I make all the time & it doesn't bother me. Thought I would share it. It is delicious!
Sweet Crunch Mix
5 cups Rice Chex
3 1/2 cups popped popcorn
1/2 cup peanuts or chashews
1/2 cup broken pretzels
2 Tbs soy butter
6 Tbs packed brown sugar
2 Tbs light corn syrup
1/2 tsp vanilla or maple extract
Microwave: In micro bowl combine cereal, popcorn, peanuts & pretzels; set aside. In another micro bowl combine rest of ingredients. Micro on high 2 min. until mixture boils, stirring after 1 min. Pour over cereal mixture;stir until all pieces are coated. Micro on high about 4 minutes, stirring throughly every min. Burns easily so watch it!
Conventional Oven: Preheat oven to 250 degreesF. In open roating pan, combine cereal, popcorn, peanuts & pretzels; set aside. Combine remaining ingredients. Cook over med heat 5 min. or until boiling, stiring frequently. Pour over cereal mixture; stir until coated. Bake 45 min., stirring every 15 min.
For both methods: Spread on waxed paper, cool, break up. Store in air thight container.
If popcorn or any of these things bother you substitute something else or use smaller amount.

I can handle popcorn with no problem and I know I can eat some pecans, so I'd love to give it a try. I don't have a microwave, so please do post the conventional oven directions. Thanks.

This does look great! Popcorn and I don't get along, but I wonder how this would work if I broke up some rice cakes and threw them in instead. They have a similar texture to popcorn. It would be worth a try!

Cracker Jacks. Well, okay, no prize (except the taste), but that's pretty much what this is. It's good. Mine never got all solidified into one big mass, but I think that's because I didn't cook the syrup long enough. I think it would be fine even without popcorn - just up the pretzels. The coating is yummy.
I did use nuts - salted cashews - and just threw in the big pieces. Next time, I'll chop them up pretty fine so they end up spread throughout the mix.

Mine wasn't one big mass either I don't think it's supposed to be. I think you probably did it right! I think if you cook it too long it will get too hard. I've made this many times. Last time I was out of Rice Chex so I used Crispix the one that has corn on one side & Rice on the other. Good too! I think you can use just about anything. I think the Rice Chex is probably safer though. I don't Like Cracker Jacks that well!

Sounds good but the popcorn alone would put me into fits. I just can't handle it. Then there are those nuts. I eat peanut butter and it's okay. I also eat some nuts but never ever more than an small handful.

1/2 cup is hardly any spread through this much other stuff so if you can handle a small handful straight, you could probably handle the nuts in here especially if you chop them up. The next time I make this, I'm going to leave out the popcorn and boost the pretzels. Then the ingredients will basically be the same as for Heather's Honey Glazed Snack Mix (except for the nuts and you could leave those out, too), but with this great syrup.
