Here it is. I modified it to make it IBS safe. (Smart Balance in lieu of real butter, egg whites instead of egg yolks and fake buttermilk.) I wonder if it will taste the same? I'm going to try it out in the near future, but let me know if you make it how it turns out! FYI - I've never had it with the raisins.
1/4 cup butter substitute (Smart Balance) 2 cups all purpose unbleached white flour 1/8 cup granulated sugar 1/2 tsp salt 1/2 tsp baking powder 1/2 cup raisins (optional) 2 egg whites 3/4 cup soy milk & 1 teaspoon vinegar to make "buttermilk" 1/2 tsp baking soda
For the egg wash: Egg white combined with 1 tsp water.
Preheat oven to 350 degrees.
In a bowl, combine the "butter" with the flour, sugar, salt and baking powder. Add raisins to the flour mixture.
Whisk together the other egg white, "buttermilk" and baking soda. Add to dry ingredients and knead into a dough.
Place dough on a cookie sheet and flatten to 2 inches thick. With a very sharp knife, slash a large 1/4" deep X across the top of the dough and brush with egg wash. Bake in preheated oven for about 20 minutes.
