I wanted to try this because my tummy has been jumpy and it's lower fat than the EFI bread recipes I usually make. Unfortunately, all my bananas were far too yellow. So I used banana baby food instead and it turned out great. I'm looking forward to making it again with real bananas.
Question: A friend of mine throws her black bananas in her freezer, skins and all. Could I do this with my bananas as they ripen, then thaw them and use in this bread?

You certainly could! I freeze my black bananas all the time and the bread always comes out great. I take my skin off and then freeze them in a labeled Ziploc freezer bag, but I'm suring leaving the skins on would be fine, too.

I also freeze black bananas all the time. This is something my mom does too. My Dad has taken to calling this as purgatory, the freezer being the waystation between bananadom and something even better.

Yes, you can freeze in skins or out in a freezer bag. I don't care for Heather's recipe though I like this one: banana bread yum yum

I freeze my bananas all the time... my boyfriend would say it's because i buy too many bananas and let them go black - so our freezer is quite full of bananas waiting for me to make them into bread! haha
banana purgatory...haha i love that!
but i always freeze them in saran wrap or ziploc or a container - you can freeze them right in their skins? And then what, do you just let them thaw out on the counter or can you microwave them for a few seconds...?
thanks!

My mom always left them in their skins and let them thaw on the counter until she was ready to use them. It works great and saves on baggies.

I keep meaning to ask this question, thanks for the thread! Does anyone have any tricks to make the bananas go blaclk quicker? I get so impatient waiting for mine to blacken!
Also if you can tolerate nuts I usually put a handful of walnuts into the Brown Sugar Banana bread recipe and it really adds to it.
