This has become my winter comfort food! You can find minced ginger in your local grocery store...I found mine in a tube and it is wonderful! Alicia didn't have a name but said it comes from the Phillipines...
Something Filippino
1 skinless, boneless chicken breast, chopped into small pieces 1 tsp oil 1 small onion, finely chopped 2 tablespoons minced ginger 1 clove minced garlic 2 + cups water about 3 or 4 chicken bouillon cubes 1 cup rice salt and pepper soy sauce lemon juice
Saute the chicken and onion in the oil until cooked. Add ginger and garlic and saute until fragrant - about a minute or two. Add water and bring to a boil. Add rice and bouillon cubes. Cook until the rice is done, about 15 minutes. Add a bit more water if needed. Consistency should be soupy-stewy - a bit on the runny side. Serve in small bowls. Add salt and pepper, and soy sauce and lemon juice to taste (about a sprinkle of each).

is that it is "porridge-ish" when it comes off of the stove but then the rice will absorb the liquid and the soupy-ness is gone.It is good either way...I usually double the recipe, my kids love it. I like it with soy sauce and then a little lemon squeezed on top.

Ok I am eating this right now for lunch instead. It is really good! I had to use canned chicken breast from Swanson and powdered ginger but it still tastes pretty yummy. I have found a new staple food!!

So glad you like it...try to find the minced ginger if you can. It is simple yet tastes fresh.
I buy a bag of chicken breasts at Sam's Club and will boil the entire 6 lbs. I then dice it up and put 2 cups of the diced chicken into baggies and then the baggies into a one gallon freezer bag. That way whenever I need chicken for this dish, casseroles or soup it is already done.
I wish I had thought about this when my kids were toddlers! It makes life much easier!

I once called a baby girl "guappo and pogey" (meaning handsome) and they are apparently only for BOYS. "Maganda" (beautiful) is for the girls. LOL - I have much to learn in tagalog.
