PERSIAN RICE PILAF (from Southern Living 2002 Annual Recipes) (Makes 6 c) Real basmati rice has a distinctive nutty flavor and fragrant aroma. If you can't find it, try American grown Texmati, which is a cross between long grain and basmati rices, or substitute the regular long grain kind.
2 tbsp butter, margarine, or oil or use cooking spray 1 small onion, chopped ½ slivered almonds (you probably could grind these) 1-1/2 c uncooked basmati rice ½ c golden raisins 1-1/2 tsp ground tumeric ¼ tsp ground cinnamon ½ tsp salt 3 c chicken broth
Put fat or cooking spray in skillet over med heat. Add onion and almonds and sauté 7 min or until onion is tender and almonds are golden. Stir in rice and next 4 ingr. Saute 2 min. Add broth and bring to boil. Cover and reduce heat and simmer 20-25 min or til rice is tender.
Prep 10 min Cook 35 min

OK, it turned out really good.... I forgot to buy onion so I just added dry onion when I added the broth. And I used a tablespoon olive oil to saute the almonds (I should have used Pam, it would have saved 119 caloires)... oh well. And I did not have golden raisins so I just used plain ole raisins. It made LOTS (6 servings).... we will have left overs tomorrow for dinner...
