I made this up tonight and it turned out well- moist and light. 1 box white cake mix 2 large ripe mashed bananas 3 egg whites 1c Kame light coconut milk Bake according to package directions in the pan of your choice. I put a little nondairy whipped creamer on it but you could experiment with frostings. There are 48 grams of fat in the whole cake.

The cake could also be made with angel food cake mix, omit the egg whites but keep the banana and coco milk. I added the fat wrong; for Kame brand milk the total fat will be 44 grams for the whole cake. The calories are about 250 per piece (?).
