For KinOz-crunchy lemon muffins didn't turn out so good-could use advice! :)

Hi! Your muffin recipe sounded so good, but when I made it the tops definitely weren't crunchy- in fact I'd say they were downright gummy on top. I followed the baking instructions, but I did substitute rice milk for the soy milk, because I don't do well with soy. Do you think this might have made a difference? Any advice would be great! The lemon flavor came through nicely but the texture needs work. Thanks! Linda

I'm sorry about that! I'm not really sure what went wrong. I've made them quite a few times and not had any problems. Even though they are called "crunchy" i wouldn't describe them as being crunchy like a cookie but they have a bit of a crunch from the sugar syrup. They definately shouldn't be gummy!
Were the tops of the muffins OK after baking before you added the syrup? Could they have been a bit underbaked maybe?
I'm not sure about the rice milk but I wouldn't think it would make a difference but then I haven't tried it before.
