I just found this on the web & thought it sounded pretty good & safe for us IBSers. Just remember to peal the pear beforehand... enjoy!
Ginger Almond Pears
Slightly unripe pears improve in texture and flavor after a few days. A little softness around the stems means they're ready. Bartletts, red Bartletts, and Anjou varieties taste best and are good for cooking.
The most potent seasoning in this dessert is ginger, known for its health-giving properties. When used fresh, it's effective at improving digestion and calming nausea and indigestion—making it a great finish to any hearty meal.
Ingredients
5 firm, ripe pears, peeled, quartered lengthwise, and cored
3 cups apple cider
2 teaspoons finely chopped fresh ginger
Pinch of salt
3 tablespoons arrowroot or cornstarch
1/3 cup cold water
1/2 teaspoon almond extract
Preparation
Place pears, cider, ginger, and salt in saucepan.
Bring to a boil, reduce heat and simmer until pears are tender, about 15 minutes.
Dissolve arrowroot in cold water. Add to simmering pears, stirring, until sauce is thick and clear.
Remove from heat, and stir in almond extract. Serve warm or cold.
Makes 6 servings
