Okay, instead of punkin pie yesterday, I decided to try something a little different out of the recipe book. I went with the Vermont Maple pie.
If you've got a sweet tooth, this pie is definitely for you (in fact, I'll be making one for my father at Christmas time).
But goodness, what a pie. :-)
My eggs were (apparently) a bit too small, so the filling came out a tad on the runny side, but still absolutely delicious!!!!!!!!!

I made this pie for Thanksgiving too! I LOVED it, but mine was also very runny - I can't figure out why.....

In consulting the genius cooks in my family (my aunt is a whiz with pies, and mom, well, she's mom - she knows all), we came to the conclusion that an additional egg white (or two) could help thicken the pie.
I also stuck the thing in the oven for another 10-15 minutes once we got to mom's, and it thickened up more after that, and then even more so once it was in the fridge.
