So what's everyone having for Thanksgiving?

What side dishes or recipes have you decided to make for an IBS safe meal? I looked at the post about Thanksgiving in the newletter, but nothing appealed to me. Or they contain wheat which I still don't eat...or they call for an appliance I don't own!
So, what are you guys making and planning on eating for Thanksgiving?

We're going to Vermont for Thanksgiving. Everyone loves when I make Heather's cornbread, so I'll be making that while I'm up there. Other than that, I usually make myself a sweet potato also. And turkey breast of course! Not sure what else yet since I'll be travelling, but I'm sure my mom will be wanting to know soon so she can be prepared!

I'm not cooking for Thanksgiving, but I'm making what I WOULD have made for T'day for Christmas, so I'm going to do...
- A turkey, of course - Apple Sweet Potato Scallop - Stovetop stuffing (safe for me), doctored up with real onion and celery and baked in muffin tins (so we all get the crunchy stuff!) - Some sort of cooked veggie... will probably keep it simple and a green beans amandine sort of thing - Homemade bread - Cranberry-orange relish or something similar - Gravy for everyone else - Pumpkin pie, of course!
I might make mashed potatoes, too. Hmm.
You'd never know I'm only cooking for 4 people, haha.

a natural turkey (no dairy)- DH will smoke it for me mushroom/bread stuffing garlic mashed potatoes: boil potatoes with whole cloves then mash together with chicken broth...
Chicken broth gravy
some sort of vegetable.. maybe brocamoli.. maybe something else.
if we get enough guests: he may make cheesy potatos for the rest of them too...

the meal will be totally not-safe for IBS. It's just the four of us so we will have turkey, dressing, green bean casserole and potato something. Pie of course...pecan, sweet potato and buttermilk.
Oooh I think I gained 5 pounds just typing this!

We had turkey, green bean casserole (made safer - but not safe), mashed potatoes, sweet potatoes, double decker sweet potato pecan pie (Eating for IBS pg 254), and homemade sweet swirl bread with maple butter (I don't eat the butter). The bread is a basic white bread that you put the brown sugar and a little butter (I sub smart balance light) and roll it up and bake. Then I soften butter and add real maple syrup to it (I don't measure -- I just add some). Then I top it with brown sugar and put it in the fridge to get more firm again. I usually mix it with a little margarine so it doesn't get too hard. They use that on their bread.

I'm going to my mother's house, and she always makes the food safe for me to eat. Yay!
What I'll be eating: turkey green beans mashed potatoes sweet potatoes cranberry sauce/relish rolls
I think I'll have a glass of wine, but instead of pumpkin pie I might take some pumpkin bread or peach cobbler for dessert.

Mac and I have a ton of work, plus I'm a veggie, and Mac hates even the smell of turkey cooking in the oven, we're not really "celebrating" Thanksgiving. Oh, and Tofurkey is nasty in my opinion. I had it once as a kid when my mom was on a tofu kick. Can't do soy now anyway.
That said, I am at least making Heather's 5 minute pumpkin pie, and probably trying Amie's mushroom stuffing at some point. Garlic mashed potatoes maybe as well, since we both love those. Something else pumpkin-y with the rest of the pumpkin puree....maybe bread or ice cream.
Roomies are headed home for the holiday, so we'll have the apartment to ourselves Wed-Sun, so nice and quiet to get work done and maybe some cooking in there!
