flourless chocolate cake

I love this passover recipe and the post about safe solid chocolate reminded me that it would work here too... but be careful about fat content and size of portions...
16 egg whites- beaten stiff 16 oz semi sweet or unsweetened chocolate sugar to taste
note- I use semi sweet and no sugar, mom uses it and adds SOME sugar, I've seen this made with sweetened chocolate as well! with unsweetened chocolate i always add the sugar to the melted chocolate until it tastes sweet enough to me... but you could add it ot the eggs instead...
beat egg whites until stiff peaks form melt chocolate and fold in sugar gently fold chocolate into egg whites (original recipe had 2 yolks included in the chocolate, but it works ok without and is lower fat)
pour into UNGREASED springform (you can line the bottom with parchment if you like to serve without the bottom round!)
bake in a preheated 300 degree oven for 1 hour.
YUMMY!

You can only use dairy-free chocolate (ie. not milk) and the you have to take the amount of fat into account, but in a cake that'll be a small percentage.

Well it's still high fat and it does contain some caffeine. Personally, as long as I'm not eating dark choclate by the handful and I buffer the fat with low-fat SF, then I'm fine.
Even Heather eats some chocolate!

its not the greatest but some things are worth it to not give up for some of us... like small amounts of REAL chocolate and that cake is rich enough that small amounts will make me satisfied, so I keep it in the freezer.. and make sure I eat it after something high in SF and low in fat... but thats me... I do small amounts of chocolate chips too that way

This is interesting because I had another flourless chocolate cake recipe that was unsafe for me now with the egg yolks (and whipped cream filling). I will mark this recipe for later.
