Fot those that don't know, a pasty is the yooper version of a pot pie. I'm trying to develop an IBS safe recipe. Here is the safest base recipre I've found. I know how to modify the meat/boulinan content but what do I do about the lard? Can vegtable shortening be used? IS vegetable shortening safe? Any other ideas?
4 1/2 cups all-purpose flour 1 cup lard 1 1/4 cups ice water 1 teaspoon salt 5 1/2 cups thinly sliced potatoes 2 carrots, shredded 1 onion 1/2 cup diced rutabagas 1 1/2 pounds ground beef 1/2 pound lean ground beef 1/2 pound lean ground pork 1 tablespoon black pepper 1 cube beef boullion 1/2 cup hot water

if the lard helps to make the dough, perhaps you could omit it entirely and use a safe bisquick brand filler to form the dough of the pot pie?

I'm assuming that this is made into something like turnovers, isn't it? The pasties I'm thinking of are sort of a handheld kind of food... if that's the case, maybe try one of the pie crust recipes in the recipe index, omitting any sugar that the recipe calls for. Basically, I think you could use some vegetable shortening, but a CUP of shortening is definitely way too much fat.
If it's more like a potpie... well, one of the crust recipes in the index would work as well, or you can make more of a biscuit topping with reduced-fat Bisquick and soy milk.
And, of course, you'll want to substitute ground turkey for the beef and pork, neither of which is safe. I would add some finely chopped portabello mushrooms for flavor, since turkey can be kind of bland - maybe substitute a couple cups for the pork.
It's up to you if you want to try to use the beef bouillon cube - personally, I'd use the Lipton Beefy Onion recipe soup mix stuff - not a whole packet, but maybe a teaspoon or two of it. It does taste beefy, but there's no beef products in it.

I don't have the link handy, but you might try Heather's crust recipe that's in her chicken pot pie recipe.
I'm not a Yooper (just a troll who lived under the bridge), but I've been wondering about safe pasties, too.

for my first try at making pasties, I gonna use homemade breen bean soup as the filler, its more of a stew actually. I know this soup is IBS safe so any IBS problems will be from the crust, not the filler. I'm gonna try that pastry dough recipe and see how it works. I'll be sure to post my results.
