I don't think anyone has started one of these threads this week! After seeing Shell's apple sweet potato scallop mentioned recently, I just can't resist trying that one this week. I can't wait!

I'm going to try Shell's recently posted Easy Black Bean Soup. I plan on making some homemade corn tortillas to go with it. Yum!

They are in the oven right now! The only difference I made was using shredded chicken breast instead of ground turkey.

I'll letcha know how they turned out. I love Mexican!

I'm in total comfort mode this week and have a few treats planned. I plan on making Lemon Soymilk Pudding (posted by Kree in the exchange index). I also plan on jazzing up veggies with White Sauce 2 (Another Basic Dairy Free White Sauce) posted by Shell Marr in the exchange. I'm a little bit disenchanted with veggies this week for some odd/offbeat reason, so I guess I need to play a little. Must be this cold/flu.

If I don't eat 'em, I'll feel really crappy and have muscle cramps/spasms from low sodium/potassium levels. I'll probably whip up Little Minnie's Spicy Spinach more than a few times as well as variations of ShrimpPho .

As you can see all are really fast and really easy!

I am going to make a chicken curry with rice, I may even make naan if I am up for it. I am also looking forward to the chance to try shell's apple sweet potatoe scallop. Let me know how it is!

I made Casey's Thai Barbecued Garlic Chicken this week, and it was yummy! I used the broiler on the low setting.
