Double Ginger Cookies (Makes 2 dozen cookies)
I'm always on the lookout for recipes using crystallized ginger, and these look SO tasty!! The recipe says they also freeze well.
1 1/2 cups all-purpose flour 1 cup whole-wheat flour (or use more all-purpose) 3/4 cup chopped crystallized ginger 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground ginger 1 1/4 cups sugar, divided 1/2 cup applesauce 1/4 cup vegetable oil 1 teaspoon grated fresh lemon rind 1 tablespoon lemon juice 1/4 teaspoon vanilla extract cooking spray
1. Lightly spoon flours into dry measuring cups, and level with a knife. 2. Combine flours and next 5 ingredients (flours through ground ginger); stir well with a whisk. 3. Make a well in center of mixture. 4. Combine 1 cup sugar, applesauce, and next 4 ingredients (applesauce through vanilla). 5. Add to flour mixture, stirring just until moist; cover and chill dough at least 1 hour. 6. Preheat oven to 350 degrees. 7. Lightly coat hands with flour. 8. Shape dough into 24 balls (about 2 tablespoons each; dough will be sticky). 9. Roll balls in 1/4 cup sugar. 10. Place balls 2 inches apart on baking sheets coated with cooking spray. 11. Bake at 350 degrees for 15 minutes or until lightly browned. 12. Cool 1 minute on pan. 13. Remove from pan; cool completely on wire racks.

Nah, I meant that Shell beat me to saying "I love you" for finding these - LOL!! Can't wait to try them! I was just getting grumpy about holiday baking, thinking I wouldn't be able to eat any of the cookies I'm making... now I don't think I'll worry about it.

Where do you find chopped crystallized ginger? I am always trying new desserts. This looks yummy, so maybe I will try it this week. The only ingrediant I don't have is the crystallized ginger, I just have regular ginger.

I found the crystallized ginger at Safeway.... it was in the produce section with the other dried fruits...like to make fruit cake with. It came in a little 4oz tub like the pre made hummus comes in. It was only $2.29!
Like this....
I've also seen it in the bulk section at the HFS...not sure of the price.

Thanks, I will check it out. We don't have a Safeway here...I have a feeling I am going to have to hunt for this one. I think it will be worth it, though. Thanks for letting me know what to look for.

I get it at a spice store. It comes in a small spice jar. It needs chopping into smaller pieces so you don't get a big, strong piece of ginger.
