Note: This is a Weight Watchers recipe. It does have beans in it, but I think the amount could be adjusted per tolerance & preference. It did not bother my IBS (nor did the salsa).
Weight Watchers' Baked Chimichangas
Points per chimi: 5 Servings: 8 Cooking time: 30 minutes Level of difficulty: Moderate (but I thought it was really easy. )
Ingredients: 2 servings cooking spray (5 one second sprays x 2) 1/2 lb. uncooked ground turkey breast 16 oz. can FAT FREE refried beans 8 oz salsa 4 1/2 oz. can mild diced green chilis 1 tsp. chili powder 3 TB thinly sliced scallions or 3 TB diced onion if tolerated 1 cup shredded reduced fat cheese (I used Lisanatti soy cheddar) 8 large burrito flour tortillas 1 cup salsa 1/2 cup sour cream alternative
Instructions: Preheat oven to 350F. Coat a large skillet with cooking spray. Coat a 9x13 baking dish with cooking spray. Add turkey to skillet and cook over medium high heat until lightly browned, about 5 minutes. Drain any excess liquid from pan and then add beans, 8 oz. of salsa, chili peppers, chili powder and scallions or onions. Cook until heated through, about 3 minutes. Stir in cheese.
Meanwhile, wrap tortillas in foil & warm in oven for about 10 minutes. (Basically, you want them soft & pliable.) Assemble chimichangas by spooning about a half cup of turkey mixture onto each tortilla; fold in sides and roll up. Place chimichangas in prepared baking dish. Bake uncovered until tortillas are crisp and brown, about 20 minutes. Serve topped with 2 TB of additional salsa and 1 TB sour cream alternative.

I made these a few nights ago and just loved them. I sprayed a little cooking spray on the tops before baking to give them an extra crispy shell...mmm. I just finished the last of the leftovers. Yum!

Tofutti makes a non-dairy sour cream that isn't too bad. Still have to be careful of the fat content but it's a nice substitute!
