Blueberry Banana Bread (Supposedly makes 2 loaves... but see notes)
This is a scrumptious and different way to make banana bread. The blueberries give it an excellent flavor! Yum!
1 1/4 cups sugar 1/2 cup soy margarine, softened 1/2 cup Egg Beaters or 4 egg whites 1 1/2 cups very ripe bananas, mashed (about 3) 1/2 cup soured soy milk or plain soy yogurt (I used the soy milk) 1 teaspoon vanilla 2 1/2 cups flour 1 teaspoon baking soda 1 teaspoon salt (I used less... probably around 1/2 tsp) 1 cup frozen blueberries (no need to thaw)
Put oven rack on lowest position. Preheat oven to 350 degrees. Grease bottom only of two loaf pans. Cream butter and sugar till fluffy. Stir in eggs until well blended. Stir in bananas, buttermilk OR yogurt and vanilla. Beat until smooth. Stir in flour, baking soda, and salt until just moistened. Stir in blueberries. Divide batter evenly between the two loaf pans. Bake 60-70 minutes or until toothpick inserted in the middle comes out clean. Cool 10 minutes in pan. Loosen sides and remove bread from pans. Cool completely before slicing, about 2 hours.
KREE'S NOTES: *I think saying this makes 2 loaves of bread is too generous, at least in a 9x5-inch loaf pan. I only ended up with a very small loaf and 8 muffins. Maybe it would make 2 8x4-inch loaves? *This is just at the 25% fat limit at as. You could certainly replace some of the margarine with applesauce, I'm sure.
