What's Cooking--Week of 9/12

Tonight I made Heather's Easy Peachy Chicken from EFI. YUMMY! I only used one large onion instead of three medium, and that was plenty.

Tomorrow I'm making the Wok-Steamed Teriyaki Ginger Salmon (also from EFI), which I make all the time. It rocks!

I really hate to make anything that requires excessive chopping and measuring, so these are both good ones.

This week I'm going to try Linz's Mushroom Risotto. I've never even had risotto, let alone cooked it, so I'm looking forward to trying it. Baby Bellas were on sale this week, so that will be the type of mushroom I'm using.

I'm making Heather's Lemon Asparagus (Pasta) Sauce, from the Jan.26, 2005 newsletter. I'm adapting it, though--eliminating the soy parmesan and the olive oil and substituting herbs.

Also, I bought a couple small anise (fennel) bulbs, so I'll be making a version of Roasted Fennel and Baby Carrots, posted by little Minnie in the Exchange Index. As I have an illegal quantity of 'shrooms in the fridge, I intend to substitute mushrooms (portabellini) for the carrots. I think I'll add some rosemary, as well. The oil will also be appropriately substituted. This will probably end up a salad topper/salad.
