CUCUMBERS!

I have a bunch of fresh cukes from the farm and need a safe way to serve for a cook-out for the weekend. Suggestions?

I don't think there is a recipe for cukes that is actually "safe". They are a burpier IF vegetable and have to be eaten raw (you don't cook cucumbers). I eat them with SF and am fine but there isn't a specific way to make them safe. Removing the skin and seeds helps. I also pickle them.

I love cucumber juice! Do you have a juicer?
I've stir-fried them, in the past and created a kind of glaze. Another thing I've done as well is FINELY SLICED them in the food processor and made a Thai salad with carrots--very very very popular at parties--it's just seasoned rice vinegar, fish sauce, and a little lime juice for the dressing.

I just had another cucumber thought. Have you ever had cucumber soup? There's tons of recipes out there. My grandmother makes cucumber/potatoe soup: it's amazing!!! Pickle soup is really really yummy too.
