Easy meal for the stressed college student

Here is an easy one, takes about an hour to cook but it doesn't need constant attention.
Redneck dutch oven baked bean chicken
2 small cans baked beans 3-5 chicken legs 2 quart dutch oven or similar roaster pan salt pepper Franks Red Hot sauce
Pour first can of beans into dutch over, mash with potato masher. Stir in a couple dashes of salt and pepper. Giver 'er a couple dashes of red hot sauce to your liking, 3-4 dashes is pretty mild. Place chicken in dutch oven. Pour the remaining can of beans over the chicken. Cover and place in oven, bake at 350 degrees for 30 minutes. Turn chicken legs and bake for another 30 minutes. Check to see if they are done by picking up one leg, if the meat falls off, its done. If not done, prolong cooking in 7-10 minute increments until done. You can also do this with chicken breast if you cannot tolerate dark meat. Serve with a bread product, ie cornbread or french bread.
This is a great meal to cook while you need to get caught up on your apartment cleaning or some light duty studying. This meal is loaded with soluble fiber and is reletively cheap.

but it sould also be skinless... and make sure your beans don't have pork in them...personally I would use vegetarian. Looks great otherwise!

Being that I'm originally from Alabama, I love the name of this dish.
I'd like to second ShellMarr's point about white meat and skinless chicken. I've seen from your other posts that you're still struggling with stability, so I'd definitely stay away from dark meat chicken and chicken skin - they're trigger foods partly because of the fat and fat can be a real problem for IBS-D.

actually, i'm pretty stable, I just don't frequent the board as much when I'm dong fine. I find that if I trim off all the fat and skin, I can eat both light and dark meat. The soluble fibre seems to help alot, as you can see this dish is packed with it. Also, whenever I eat ANYTHING, I first eat a slice or two of bread. This seems to make the greats diffrence.

I really want to give this dish a shot. Has anyone made it before? It says to mash the first can of beans but it doesnt say to mash the second can..does anyone know if you are supposed to?
