Kree's cooking again... so here's Creamy Artichoke Soup!

Creamy Artichoke Soup (Makes 6 servings)
This has got to be the easiest soup I've ever made, and it's so tasty! The original recipe called for light cream, so if you want it thicker like that I'm sure you could also add some cornstarch dissolved in water while you're heating it! Personally, I liked it like this.
2 (8 ounces) cans artichoke hearts, drained 1 1/2 cups chicken broth lemon juice (I just used a few squirts from the bottle!) 2 cups plain soy milk 1 pinch cayenne (or just black pepper)
1. Combine all ingredients in a blender and process until smooth. (You can do this early in the day and refrigerate until just before serving.) 2. Heat soup gently until hot, but not boiling. I cheated and nuked it in the microwave! 3. Garnish with some finely grated carrot, or parsley.

Kree I think I've gained 5# just reading your recipes today!! This one just looks so very very good... I'll be saving it for a cold night...but will have to calorie budget this into my diet!!

Lol. Good thing you can't really gain weight from looking at recipes or I'd be in biiiig trouble. I hope you are able to "budget" this one in. It's really tasty!

I found 14-oz cans of artichoke hearts, so I used one of those and cut the broth down to 1-1/2 cup and the milk (I used rice milk) down to 1-3/4 cups. I used the juice of 1/2 lemon but I'd use a little less next time - it was good with that much lemon but I'd rather taste the artichoke more.
I think when I make this again, I might use the 14 ounces of artichoke and cut the liquids by half. That would make it thicker and I'd like to try it that way.
