PB brownies

I had a PB brownie craving and found this recipe. I will make them this week (too tired tonight). Peanut Butter-Chocolate Chip Brownies
Cooking spray 1 cup all-purpose flour might sub a little cocoa powder and make them real brownies 1/4 cup semisweet chocolate minichips 1/4 teaspoon baking soda 1/8 teaspoon salt 3/4 cup granulated sugar 1/4 cup packed dark brown sugar 1/4 cup creamy peanut butter using reduced fat PB 1 tablespoon vegetable oil 1 teaspoon vanilla extract 1 large egg using all egg whites 1 large egg white
Preheat oven to 350°. Coat bottom of an 8-inch square baking pan with cooking spray (do not coat sides of pan).
Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, chocolate chips, soda, and salt in a bowl.
Combine sugars and remaining ingredients in a bowl; stir until well-blended. Add flour mixture, stirring just until blended. Spread batter in bottom of prepared pan. Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out almost clean. Cool on a wire rack.
Yield: 16 servings (serving size: 1 brownie)

They totally satisfied all of my peanut butter cookie cravings!
I made these again today and made a double batch. Only I got interrupted by the phone and only added 1/2 C sugar instead of 1 1/2 cups! The texture was different -- more cake-like -- and they obviously weren't as sweet, but they were actually still really good. So if you're looking to cut back on sugar, it's very doable. obviously this will up the fat though!
Also, the chocolate chips are good, but I think you could cut these out and not miss them because the PB brownie part is so good on its own.

I made these today and they were very good, but I have some questions. When I was done mixing the batter was very thick. I had to "force" it to spread. I pushed it together with my fingers to cover the bottom of the pan. The batter was more like a bar cookie than a brownie. Is it supposed to be so thick? Also it didn't rise much. Maybe someone could tell me their thoughts on what might have happened. Thanks so much.

thanks! not the best thing for one to read about when one is trying to lose weight... but it is that time when I start craving chocolate and hopefully this fulfills the need!!!!!

I also remember having to push the batter like that. I don't think it rose much either. I think it is more like cookie dough than cake batter.

Yummmy! So I just made them and yum! Only problem, they came out a little more cake like than brownie like. Any way to make them more brownie like?
