I made Casey's Carrot-Ginger Bread. I used pre-grated carrots (Mac and I have been buying bags of them since they cook faster and are easier than buying baby carrots), which I think I need to cut smaller next time. It was good, but both Mac and I think it needs something else. His suggestion was to add few scoops of canned pumpkin and more spices, and I'm inclined to agree. Overall good though.

This week I tried Cuscus Estivo (Summer Couscous with Herbs). It was very good and a great side for grilled fish. The only problem I had was I didn't have mint leaf (the store didn't even have it) and I was short on basil. So, it did taste like it was kinda missing something, so I don't know if that was it. I might try using veggie or chicken broth instead of water for the couscous next time (or maybe 1/2 water half broth) just to bump up the flavor.

I made Kree's Peking Chicken Burgers. These are wonderful! They seem as "rich" as beef burgers, if that makes sense. I used ground turkey and did add the scallions. We ate them on plain hamburger buns with just a little bit of ketchup. Perfect!
I did have one problem - well, my husband, the designated griller did. The patties had very little structural integrity. He thinks I needed to make them fatter (I hate fat burgers ). I wondered if it was because I used Panko Japanese Style Bread Crumbs - maybe the patties would have held together better if I used more traditional style bread crumbs (all of which have dairy and/or HFCS ).
These burgers are going to be a summer staple regardless - they're so yummy - but it would be nice to know how to make them easier to handle. Any thoughts?

I'm glad you liked the burgers, Sand! Personally, I use Matza Meal. It's a kosher breadcrumb that doesn't contain any dairy. You can get it near the other Jewish foods in the grocery store. I haven't made them yet this year, but I think I do remember those burgers being a less solid burger, too. I think I just dealt with it and tried to keep them together... and the end product is so worth it, lol. Maybe a few more breadcrumbs would help.

I made the cornbread in Heather's cookbook. It was great! I added just a little cumin and cajun seasoning. I made it with chicken pieces with ginger/jalapeno BBQ sauce that I grilled and some coleslaw. I cooked the cornbread in a cast iron pan. The amazing part was DH was making yummy noises all through dinner and I thought he wouldn't be very impressed with it!
