Little Minnies post inspired me to add some summer-fruit recipes ive been trying recently!
easy fruit parfiet -1 cup/container vanilla soyogurt [non-dairy] -fresh/froz. blueberries, strawberries & peaches -agave or honey [for topping] -granola [optional] for additional topping
in a bowl, empty the yogurt. add blueberries on top, then 2-3 small strawberries, and a couple peach slices. arrange fruits and drizzle agave/honey over the fruit. top with granola and serve. makes 1 depending on yogurt amount.
fresh burst smoothie -frozen blueberries -1 cup/container of lemon soyogurt [non-dairy] -1/2-cup of fat free vanilla soymilk [*WESTSOY BRAND*] -1 TBSP/acacia
in a blender, add in blueberries [about 1/2-inch leveled] empty the container of lemon yogurt on top of the blueberries, pour in the soymilk, acacia and blend. makes roughly 8 oz. depending on amount of soymilk and yogurt you use. great way to get acacia and really fast! maybe 5-minute clean-up??

I wish I could get a soy yogurt that didn't taste like crap. LOL! The only brand I can get up here is O'Soy, and it's absolutely HORRIBLE.
For the most part, I love living in the boonies, but sometimes it's really a pain in the tush. No soy sour cream, no soy cream cheese, no Tofutti, no Rice Dream, nothin'.
