What do you all think of this idea? I found this on a no dairy site. For condensed or evaporated milk one reader suggests using Jell-O "cook able" vanilla pudding mix with soy milk to substitute in recipes for evaporated or condensed milk. She says, "It works particularly well in pumpkin pie. It would probably also work in fudge sauce -- just use a recipe based on evaporated or condensed milk. I add 3 tablespoons of pudding mix to 3/4 cup of soy milk to get the equivalent of 3/4 cup of the other milks."

It sounds do-able for sweetened condensed milk, but evaporated milk doesn't have any added sugar....

Do you use the regular of instant vanilla pudding, and do you think it would work for a bread machine recipe that calls for condensed milk? Also does anyone know if we can use the jello pudding with soy milk? I tried it with rice milk but it wouldn't set up. Thanks, Joan
