Has anyone ever concocted a safe tiramisu? I am almost getting there. I got a sample of a cappucino type mix that was very close to safe. If only there was cool whip without HFCS. And what to do about the alcohol that is poured on (the angelfood cake in this case)? Also does anyone have rhubarb recipes? I used to make a really yummy pie but it is too fatty. I want to make something with my rhubarb. Oh and I don't like meringue (like MIL always makes, yuck!)

You can make most dessert recipes for your rhubarb. ex:Straw rhubarb pie. Make crust with crushed graham crackers and a little oil(2 tbs)fruit and sugar like usual and crumbs on top. mix a little cinnamon and sugar for flavored crumb. muffins and cake: sub dairy for suy or rice produce and reduce oil or replace with apple sauce. ex:make preserves or sauce to serve on angel food cake. hope this helps

Rhubarb and Passionfruit Sauce (could serve with angel food cake?) Ingredients 2 sticks of rhubarb, washed 1½ tbsp water 40g/1½oz caster sugar 1 large passion fruit
Method 1. Cut the rhubarb into 1cm/½in pieces. Put in a pan with water and caster sugar to taste. 2. Simmer for 4-5 minutes with the lid on, until soft. 3. Strain the juice from the passion fruit. 4. When the rhubarb is cool, blend with the passion fruit juice in a food processor and serve.
Rhubarb Compote Ingredients 85g/3oz caster sugar ½ glass red wine 2 rhubarb sticks, diced 1 vanilla pod, seeds removed sprig of mint, to garnish
Method 1. Heat the sugar in a large non-stick frying pan until dissolved. 2. Pour in the red wine and add the rhubarb, shaking the pan to coat the rhubarb. 3. Add the vanilla seeds and heat for 6-8 minutes. 4. Remove the rhubarb using a slotted spoon and transfer to a serving plate. 5. Heat the remaining liquid in the pan for a further two minutes, to thicken. 6. Pour the sauce over the rhubarb and garnish with the mint.
My favourite is stewed rhubarb with soy custard, yummy and so comforting...

I don't have the recipe, but I know that its just stewed rhubarb and strawberries with some sugar and water... boil for awhile... I've had it twice, and my friend who makes it serves it warm in a crock pot... thick and gooey... not overly sweet... yummy as a soup in a cup or with cookies or cake to pour it over too!

Here is a yummy sounding rhubarb bread recipe (it has ginger in it!)
Rhubarb Bread
2 1/2 cups flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 tsp powdered ginger or 1 tbsp fresh ginger, grated egg replacer (to equal 1 egg) 1/2 cup sweetener 1/2 cup oil 1/2 cup orange or apple juice 1 1/2 cups rhubarb, finely chopped 3/4 cup nuts, chopped
Preheat oven to 350°F. In a large bowl, sift together the flour, baking powder, baking soda, salt, and ginger. Stir in the egg replacer, sweetener, oil, juice, rhubarb, and nuts. Mix together gently until "just mixed." Spoon into a lightly oiled loaf pan and bake for 35-40 minutes. Test with a knife to see if done. Cool for 10 minutes before slicing and serving. Makes 1 loaf.

1 1/4 C brown sugar,1/2 c apple sauce, 2 eggwhites, 2tsp vanilla, 1c soy or rice milk w/ vinegar(asks for buttermilk), 1 1/2 diced rhubarb, 2 1/2 c flour, 1ts baking soda, 1tsp baking powder and 1/2 tsp salt.
combine sugar,sauce, egg vanilla and milk. beat well. Stir in rhubarb. in seperate bowlstir dry ingredients and blend into mixture. pour into tins 2/3 full bake at 375F for 20 to 25 min. optional topping: 1tsp applesauce warmed1/3 c brown sugar 1tsp cinnamon. mix and sprinkle on muffins before baking
