What kind or kinds of rice cheese did you use - flavor and brand? I haven't gotten into substitute cheeses yet, so I'd appreciate a pointer before my first attempt.

Soy Cheese: I've used the Galaxy slices before. I like the provolone a lot better than the cheddar, though. Haven't tried the shreds, yet. It has casesin, though, if you're sensitive to that.
