OK last night we had Crunchy Skillet-Browned Garlic New Potatoes YUMMY YUMMY....and so easy (once the potatoes are peeled) and then we had Kim's Special Meatloaf (see above), I used ground turkey breast and my spices were garlic salt, onion powder, oregano, & white pepper. My hubby REALLY liked it... I think it was a little dry....so next time I will add a little more soy milk or maybe some ketchup or BBQ sauce?

Meatloaf Madness web page
8 oz. TVP (textured vegetable protein) 1/4 C egg substitute 1/2 C onion, chopped 1/4 C carrot, shredded 1 T garlic, minced 1 C cooked brown rice 8 oz. spicy salsa 2 C boiling water Preheat oven to 350° F.
Mix the textured vegetable protein with 2 cups boiling water and allow to hydrate for 5 minutes.
Combine the tvp with the egg substitute, chopped onion, carrot, garlic and brown rice. Shape into meatloaf and place on baking sheet. Bake for 20 minutes.
While the meatloaf is baking, heat the salsa in a small pot. Remove meatloaf from oven and top with hot salsa.
