root veggie recipes?

I have always been a veggie eater until finding out I have IBS recently...Still in a bit of an acute state, but am craving veggies, just can't seem to tolerate many of them. cooked squash, potatoes, mushrooms and carrots seem to be gut friendly to me.....recipes limited...any ideas?

sounds like a perfect stew!
Try some of these, Ashley's chicken and root veggie stew *you could leave out the chicken if you can't tolerate it

I find I can tolerate almost any veg in a risotto as long as it's chopped finely...it all gets so well cooked and there's so much rice that I'm fine with peppers, zucchini (this is actually very safe if you minise the peel and cook it), baby spinach, etc as well as all the root veggies!
Or there's my mushroom risotto (an old favourite) in the recipe index.

Have you thought of making any of these with root veggies? Like pumpkin muffins, bread or scones? Pumpkin, carrot and potato fritattas? Sweet potato and zucchini muffins?
The list goes on Yum, making me hungry thinking of it!
