I made this tonight for dinner...it was so easy and Shane LOVED it!! Yes, we had Beano 1st
Black Bean & Chicken Soup Over Rice
1-15oz can or jar Black Bean Soup (I used Walnut Acres Cuban Black Bean Soup)
1 lb cooked boneless chicken, cut into 1-inch pieces (used 6oz pre cooked Tyson diced chicken breast)
1/4 teaspoon chipotle chili powder
1/4 teaspoon garlic salt -optional
1 cup DRY (or 4 servings) basmati rice or what ever kind you like (prepared as directed on package)
Combine soup, chicken, chipotle, & garlic salt in medium sauce pan, bring to a boil, reduce heat, cover, simmer while rice cooks, approx. 20 minutes.
Divide rice into bowls or on plate and spoon soup mixture over it. Enjoy.
Makes 4 servings (*note: I ate 2 servings worth and nothing else)
Approx. 280 calories per serving.

I made this Sat night for dinner but replaced the chicken with diced turkey ham and added 1/4 cup diced onion and 1/2 teaspoon minced garlic and left out garlic salt.... I sauteed the onion, garlic & turkey ham together until onions were translucent...then added the rest of the ingredients... yummers!!
Makes 4 servings (*note: I ate 2 servings worth and nothing else)
Approx. 345 calories per serving
