Having a brunch

on April 3. I need to make both low fat/dairy free food and low carb food- one person is diabetic. So far I am making sausage strata (turkey sausage) and a coffee cake. That is all I have figured out so far. Usually I am much more together. The strata has some bread but I think it is pretty low carb. Any suggestions? Oh no waffles or pancakes and anything else too hard to eat/messy. And it is brunch so I want lunchy and breakfasty things. Maybe something with smoked salmon?

Smoked salmon with fresh rolls and slices of lemon is a favourite of mine. Sliced avocado would go great with that.

And Sweet Cinnamon Zucchini bread.

Grilled tomatoes...cherry ones are REALLY nice (and easy as you don't have to chop or slice them at all).

I guess eggs are out? I'll see if I can think of more...
