This is modified from a recipe in the latest issue of "everyday food". Adam pronounced this one a keeper.
1 pkg lean ground turkey (mine was 1 1/4lbs)
1/4 cup plain breadcrumbs
1 cup minced scallions (about 1 bunch)
4 garlic cloves, minced (I used less)
1/2 cup plus 3 tbsp tomato-based chili sauce
2 egg whites or 1/4 cup EggBeaters
1 tbsp chili powder
2 tsp ground cumin
1 tsp salt
1/2 tsp pepper
Warmed tortillas for serving, optional
In a large bowl, combine turkey, breadcrumbs, scallions, garlic, 1/2 cup chili sauce, egg whites, chili powder, cumin, salt and pepper. Using your hands, mix just until combined. Do not overmix.
Divide mixture into 4 equal portions. Shape each portion into a 4-inch patty, about 1 1/2 inches thick. Place on a rimmed baking sheet. Bake until browned, about 15 minutes.
Lightly brush tops and sides of patties with remaining 3 tbsp chili sauce. Return to oven, cook until done, 10-15 minutes more. Serve immediately, with tortillas if desired.
A few other modifications... I left the chili sauce out of the meat mixture, and instead topped each burger with 1 tbsp sauce - it was still really tasty. I also made 5 patties instead of 4. We skipped the tortillas. Made smaller, like I did, they'd also be really good on a hamburger roll, with additional chili sauce & some soy cheese.
