Okay, I didn't make this exactly according to the recipe, so I'll type up the exact recipe, then I'll write down what I did....
Middle Eastern Chopped Salad from _Eating Well for Optimum Health_
1 cucumber, peeled, seeded, and diced 2 fresh tomatoes, seeded and diced 2 scallions, trimmed and chopped 1 sweet yellow pepper, seeded and chopped 3 tablespoons black olives (Kalamata or oil-cured, if possible), pitted and chopped (I don't like black olives, so I left them out) 2 tablespoons fresh parsley (I didn't have any, so I left it out) 3 tablespoons fresh lemon juice 2 tablespoons extra-virgin olive oil Salt and black pepper to taste 1/4 cup feta cheese, crumbled (optional) (I don't like feta, so I left it out)
1. Combine all the ingredients. 2. Season to taste with salt and pepper, and serve. Servings: 4.
I served this with salmon and rice. The salad was very good mixed with the rice.
