One of my favorite vietnamese dishes

I have to be careful with the amount of lettuce and cucumbers I eat but the rest of it I can eat with ease. The chicken by itself is wonderful with white rice.
Char-Grilled Honey Braised Chicken (Bun GA Nuong) With Nuoc Mam Side Sauce
1 pound skinless chicken breasts, boned
2 heaping tablespoons brown sugar
2 tablespoons soy sauce
1/2 table spoon garlic powder
Honey
1 package (about 5 ounces) Oriental fine rice vermicelli noodles
Chopped cucumber
Shredded or whole lettuce leaves
Crushed mint leaves
Chopped peanuts
Green onion for garnish
Chicken: Cut boned chicken into large chunks (or substitute chicken breast) and put on skewers. Combine sugar, soy sauce, and garlic powder. Pour over chicken and marinate, covered in refrigerator for about 30 minutes. Brush with honey and grill over charcoal grill (or broil in oven) until done, about 10 minutes, turning occasionally. Drop vermicelli into a pot of boiling water and boil for about five minutes; drain and plunge vermicelli into cold water one minute to cool. Strain the vermicelli and allow it to air dry. Place cucumber lettuce and mint on the side dish. Place vermicelli and cooked chicken onto separate dish garnished with grilled green onion and crushed peanuts. Serve with nuoc Mamma Sauce on the side.
Serves four
Muoc Mam Sauce: 1 1/2 cups bottled fish sauce (from oriental market)
3 1/2 cups hot water
2 tablespoons vinegar
1 cup sugar
6 to 8 medium carrots, shredded
Mix fish sauce, water, vinegar, sugar, and shredded carrots.
(this recipe can be cut in half)

sounds yummy and I have all but the fish sauce in stock *need to get some more of that- I love it in things, and used it up in something else!* hrm- if the house hasn't sold- may try that next week sometime.

Vietnamese and Thai foods are what I miss, living in Maine... back when I lived around D.C., those sorts of restaurants and noodle shops and such were easy to find. I don't even remember most of what I used to eat, I just remember that I never tried anything I didn't like!
So if you have more recipes to share, please do! No pressure or rush, of course! And thanks for sharing this one!

Casey- can you find the sauces in the store premade? my grocer carried the Thai sauces but not the vietnamese ones.. the oriental grocer has the ingredients for those.. but I made a basic pad thai easily enough the other day... also- there are safe boxed mixes with the noodles and sauce in them if your grocer doesn't have both.. annie chungs makes the pad thai one I buy... I normally add noodles though because its got too much sauce and I don't put a ton of veggies in due to my tummy... just egg whites and chicken!

I can't get ANY of that stuff up here, where I am. The only things remotely Asian I can get in our grocery store are the cans of premade chicken chow mein, and bottles of soy sauce. I can't even get the boxed mixes, definitely no Annie Chung's. But there's a really, really fantastic health food store down in Bangor, and I can find a lot of things there - I head down there once every other month or so and stock up.

if not- have you thought about mail ordering them? I'm sure there are places that will ship non perishable groceries.. because I know people who use them.. if you want I can check for you.
