...with stevia instead of sugar and dates instead of raisins. It smelled wonderful, looked great and was moist. I don't eat sugar and so I thought the sweetness was just fine. My dh on the other hand would have liked it sweeter (he eats sugar). However he had 2 big pieces! I am not real sure I liked the 3 flours though. I feel like it gave it a taste that I didn't like. Hard to tell because it was so good and didn't leave an aftertaste. I will have to make something else with the flours to make up my mind.

the full cup full? How could you make it without any stevia or sugar? Is that possible?

I used 1/4 t of white stevia powder (found in the bin at the HFS) in place of the cup that was called for. The white power is different from the stevia in the little packets. It is the powdered stevia leaf that has been refined (to take out the green color).I do think I could be happy with the mango cake without sugar or stevia because it's been so long since I had any sugar in any way shape or form. I wouldn't miss it, I don't think, as long as I could taste the fruit. If you just can't hack it then put a dab of honey on it! The other thing I have to work out is the right GF flour. If you are not celiac then you can use a wheat flour and it would be yummy! Here is a flour blend that I want to use but I think it is too high in ISF. Can you tell me? 4 parts quinoa flour 2 parts each of amaranth,millet,buckwheat and cornmeal 1 part finely ground flax.
