Chowder for IBS

I'm new to the IBS diet, and it's amazing how much better I feel in just a week. Trying to figure out what to do with some canned salmon I bought a ton of when it was on sale, I played around and came up with this recipe. With French bread, it's fantastic:
4 large Idaho potatoes 2 cans chicken broth 1 can Alaska pink salmon (check that ingredients are only salmon and salt) 1/2 pkg fat free cream cheese, or tofu/soy cream cheese
Peel and dice the potatoes into small cubes, combine with chicken broth in crockpot and set on low. Cook for 10 hours, turn off and leave to soak overnight.
Next day, set crockpot to low to warm contents for 3 hours. Turn crockpot to high and add cream cheese, stirring until it melts. Turn crockpot back to low.
Remove bones and skin from canned salmon, flake into crockpot, and set on low 1 hour, stirring occasionally, or until ready to eat. Makes a great chowder with french bread or toast!
