I just made this, and it is really good. It makes a nice sandwich or dinner loaf with extra nutrition & a tiny bit of spice - despite the ingredients, it's not sweet, nor is it extremely carroty.
3/4 cup water 1 large carrot, grated 1 small apple, peeled, cored, & grated 1 tbsp safe margarine or canola oil 1/2 tsp salt 1/4 tsp cloves 1/2 tsp cinnamon 1 tsp ground ginger 1 tsp sugar 2 tbsp dry soy milk powder (see notes) 1/2 cup oat flour (see notes) 1/4 cup quick oats (see notes) 2 cups all-purpose flour 1 1/2 tsp yeast
Place ingredients in bread machine pan in order recommended by the manufacturer. Use white bread cycle, light crust. Makes a 1 1/2 lb loaf.
Notes:
If you don't keep dry soy milk powder around, omit the powder AND the water and substitute 3/4 cup warmed soy milk.
The original recipe called for 1 3/4 cups regular flour and 1/2 cup whole wheat flour. Depending on your tolerances, you could also use whole wheat or graham flour. I also tossed in the oats for texture.

I can't have ginger cos of GERDs but I'd love to find some veggie breads I can make in my bread machine.

Honestly, my ground ginger is a little on the old side, and I can't even taste it in the bread, and it's still tasty... you could leave it right out and it would be fine.
By the way, if you like a nice carroty taste, double the amount of carrot - the recipe should still work fine that way, too.
