1 pound lean ground chicken or turkey (skinless) 1/2 cup chopped onions 2 cloves garlic, minced 1/2 cup chopped celery 1/4 cup grated carrot 1 cup cooked brown or white rice 1 cup diced tomato 2/3 cup ketchup 1/2 cup chopped green onions 2 jalapeno peppers, seeded and minced 2 tablespoons of white vinegar 1 tablespoon EACH lite worchestershire sauce and brown sugar 1 1/2 teaspoons chili powder 1 teaspoon EACH ground cumin and prepared mustard 1/2 teaspoon crushed red pepper flakes 1/2 teaspoon black pepper 8 hamburger rolls or soft kaisers. Spray a large saucepan with non-stick spray. Add ground chicken, onions, garlic, celery and carrot. Cook over medium-high heat until chicken is browned, about 8 minutes. Stif often. Break up any large chunks of chicken with a fork. Drain off any fat.
Stir in remaining ingredients. Reduce heat to medium-low. Cover and simmer for 10 minutes, stirring occasionally. Spoon chicken mixture over bottom half of hamburger or kaiser bun, cover with top half and enjoy!
Excellent served with melted soy cheese on top!Taken from "Loony Spoons" - "Tidy Joes" by Janet and Greta Podleski - GRANET Publishing.
