These are so yummy especially dipped into a nice steaming cup of tea!
2 cups white sugar 1 cup margarine 4 egg whites 7/8 cup molasses 1 tsp. ginger 1 tsp. cinnamon 2 tsp. baking soda dissolved in water (about 1 tbsp) 3 1/2 - 3 3/4 cup flour
Cream margarine, add sugar and beaten egg whites, molasses and soda. Add spices and flour. Butter hands and roll in small balls. Flatten with a fork dipped in sugar and bake 10 - 12 mins in a moderate oven (325F).
Good luck

These sound yummy but unfortunately I think the 1C margarine would be a bit much for most IBS folks.

With all the flour and stuff it does come out to less than 30% calories from fat. I haven't tried with applesauce but I'm betting it would go well. The recipe makes 10 - 12 dozen good sized cookies. But thanks for the tip. You might even be able to dummy down the margarine a bit. I don't know. Maybe Heather would have a suggestion. I wouldn't want to make anyone sick.

Usually in baking it's unsweetened appleasauce or a combo of a little canola oil & unsweetened applesauce. Or if it's not even that much you're subbing, you can use all canola. If you're having trouble with a certain recipe, just post it and we'll help you figure it out!
