I have eaten Kree's Baked Peach Oatmeal for breakfast on a daily basis for the past few months! I've made it with peaches (of course), but also equivalent amounts of blueberries, apples and/or applesauce, and pears, depending on what's in season. Raspberries and blackberries don't work as well, because of the seeds (plus aren't as IBS-friendly, anyway). I've also mixed in Wildwood yogurt flavors in place of all or half the fruit for an extra creamy texture. Thanks for such a great, adaptable recipe!

Hi Heidi! Wow, I'm so glad you like my oatmeal so much!! It's certainly one of my favorites, but I actually never thought to try it with anything besides peaches. I'll have to give some other fruits a try soon.
Oh yeah... and welcome to the boards!

I was about to refer you to the recipe, but I can't find it on here either!! How strange. Well, here's a link to another recipe site I have it posted on. I think the only thing you'd need to change is to use 4 egg whites or 1/2 cup Egg Beaters in place of the 2 eggs.

Do you know if this oatmeal ever made it to the recipe index? Because I can't even find it in a search! How strange!
