help with recipe idea

I accidentally bought a half gallon plain soy milk. So any ideas of what I could put it in?

I use plain soy milk to cook with, but the only thing I can think of that I use a large quantity of it for is pudding.
Can soy milk be frozen? I think it can. You can always split it up and freeze some of it.
I know... my suggestions stink. I'm not feeling too creative tonight.

Make sure it's instant pudding that doesn't have any dairy ingredients in it. Jell-O brand is fine. Some store brands are not.
Also, be prepared: sometimes the pudding doesn't get as firm as it does with milk. Believe it or not, it varies from brand to brand of the soy milk. You might have to experiment to find one that works. I had good luck with the Westsoy Plain Low-fat soy milk, but terrible luck with the Hannaford store brand I tried a few weeks ago.

I use plain soy milk to make mashed potatoes with. Or I have some dairy-free boxed mac and cheese that requires plain soy milk. You could use it in smoothies with lots of blueberries or strawberries.

I made pudding but it didn't set up with this brand (it hadn't before once either- I put in some cornstarch thinking that would help) so I put it in the freezer until almost frozen and then stirred it and it was like ice cream BUT I added some vanilla and nutmeg but too much and it was gross. Just thought I would share.

but it still made a yummy topping to peppermint fudge cake!
I think next time I'll try a) boiling it with some corn starch or b) less milk or c) both!
